68th Primetime Emmy Awards

The ceremony will be hosted by Jimmy Kimmel.It was preceded by the 68th Primetime Creative Arts Emmy Awards, which took place over two nights, September 10 and 11, at the Microsoft Theater.

Ingredients
1 slice whole-wheat sandwich bread, ground into coarse crumbs
8 ounces ground sirloin
1 medium onion, chopped
1 portobello mushroom, stem removed and chopped
4 garlic cloves, chopped
1/4 cup fresh parsley leaves
1 large egg white
Kosher salt and freshly ground black pepper
Freshly grated nutmeg
2 tablespoons olive oil
1 (28-ounce) can whole peeled tomatoes in juice, crushed by hand
1/2 cup low-sodium beef broth
1 small bunch fresh basil
3 sprigs fresh thyme
8 ounces whole-wheat spaghetti
Parmesan, for serving, optional

Directions
Pulse the sandwich bread in a food processor to form coarse crumbs. Add the beef, 1/4 cup onion, mushroom, 1 tablespoon garlic, parsley, and egg white; season with salt, pepper and nutmeg; pulse again to finely chop and combine. Portion into about 20 meatballs (about 1-inch in diameter) and place on a plate.
In a medium saucepan, heat the oil over medium heat; add the remaining garlic and onion. Cook, stirring occasionally, until tender, about 10 to 12 minutes. Stir in the tomatoes and broth. Tie sprigs of basil and thyme together with kitchen twine; add to the tomatoes. Bring to a simmer and cook, stirring occasionally, 20 minutes. Add the meatballs and continue to simmer, without stirring, until the meatballs are partially cooked, about 10 minutes. Turn the meatballs; cook 10 minutes more or until fully cooked.
Meanwhile, cook the pasta according to package directions in boiling salted water; serve the meatballs and sauce over the spaghetti.

Boardwalk Empire
: “Nucky” Sandwich

 

4 slices white bread, cut ¼-inch thick
3 tablespoons mayonnaise
2 small (2-inch) tomatoes, thinly sliced
4 strips of bacon, cooked and drained on paper towels
4 lettuce leaves
Salt and pepper, if desired

Spread white bread slices each with a thin layer of mayonnaise. Making 2 sandwiches, top 2 of the mayo-topped slices with 2 strips of bacon each, followed by 1 lettuce leaf. Top with thinly sliced tomato. Sprinkle with a dash of salt and pepper and place the second slices on top, mayonnaise side down. Neatly cut the crusts off of the sandwiches, then slice diagonally in half and in half again to form four triangles each. Spear each finger sandwich with a toothpick before serving. Serves 4 as finger sandwiches.

 

Downton Abbey-inspired Classic Deviled Eggs

¼ cup mayonnaise
1 teaspoon white vinegar
1 teaspoon yellow mustard
⅛ teaspoon salt
Freshly ground black pepper
Paprika (for garnish)

Place eggs in a single layer in a saucepan or pot and submerge completely with water, until  approximately 1½ inches of water can be measured above the eggs.

Heat on high until water reaches a boil, then cover, reduce the heat to low, and cook for 1 minute. Remove saucepan or pot from heat and leave covered for 15 minutes. Rinse under cold water continuously for 1 minute.

Drain and remove eggs from pan. Crack the eggs carefully, peeling under cold running water. Gently dry with paper towels.

Slice the eggs in half lengthwise, and gently remove yolks (scoop into a bowl). Place the egg white halves on a serving platter. Mash the egg yolks until they are finely crumbled using a fork. Add mayonnaise, vinegar, mustard, salt and pepper. Mix well to combine.

Using an icing bag or spoon, carefully fill the egg whites with egg yolk mixture. Sprinkle with paprika and refrigerate for one hour before serving. Serves 4.

Primetime TV Tumbler

Ingredients:
1 1/2 ounces Shellback Spiced Rum
1/4 ounce coffee liqueur
1 ounce light ruby red grapefruit juice
3 ounces Fever-Tree Naturally Light Ginger Beer
Lime wedge, squeezed for garnish

Directions:
Build in a glass over fresh ice. Squeeze lime over cocktail and drop in.

Emmy-tini

Ingredients:
1 ounce Camarena Silver Tequila
1/4 ounce Crème de Cassis
1 ounce apple juice
1/2 ounce light cranberry juice
1/2 ounce lemon juice
Lemon wheel, for garnish

Directions:
Combine liquids in cocktail shaker with ice. Shake to blend. Strain into a chilled martini glass. Garnish with floated lemon wheel.

Lighter Spaghetti and Meatballs

Ingredients

Sticky Barbecued Beef Ribs

INGREDIENTS

  • 2 tablespoons extra-virgin olive oil
  • 1 large celery rib, finely chopped
  • 1 carrot, finely chopped
  • 1 small onion, finely chopped
  • 3 ancho chiles—stemmed, seeded and cut into small pieces
  • 2 cups chicken stock or low-sodium broth
  • 1 cup ketchup
  • 1/4 cup distilled white vinegar
  • 1/4 cup molasses
  • 1/4 cup dark brown sugar
  • 1/4 teaspoon dry mustard
  • Salt
  • Rack of 6 ribs, at room temperature

HOW TO MAKE THIS RECIPE

  1. In a large saucepan, heat the olive oil until shimmering. Add the celery, carrot and onion and cook over moderate heat, stirring, until lightly browned, about 10 minutes. Add the anchos and cook until fragrant, about 2 minutes. Add the stock, ketchup, vinegar, molasses, sugar and dry mustard and simmer over moderate heat until the barbecue sauce is reduced to about 3 cups, about 30 minutes.
  2. Transfer the mixture to a blender and puree until smooth. Return the sauce to the saucepan and simmer until thickened and reduced to 23/4 cups, about 5 minutes longer. Season with salt.
  3. Light a grill. Cut in between the bones to separate the rack into individual ribs. Grill the ribs over moderate heat, turning, until crusty and sizzling, about 10 minutes. Brush generously with the barbecue sauce and grill, turning, until deeply glazed, about 5 minutes longer. Serve the ribs, passing the extra sauce on the side.

 

 

Slow Cooker Pulled Pork with Bourbon-Peach Barbecue Sauce

 Total time: 7 Hours

Ingredients

2 teaspoons Spanish smoked paprika
1 1/4 teaspoons kosher salt, divided
1 teaspoon freshly ground black pepper
1 (3 1/2-pound) bone-in pork shoulder roast (Boston butt), trimmed
Cooking spray
1/2 cup unsalted chicken stock (such as Swanson)
1/3 cup balsamic vinegar
1/3 cup molasses
2 tablespoons lower-sodium soy sauce
1 teaspoon crushed red pepper
1/2 cup peach preserves
2 cups vertically sliced onion
5 garlic cloves, thinly sliced
1/4 cup bourbon
2 tablespoons cold water
2 teaspoons cornstarch

Preparation

1. Heat a large skillet over medium-high heat. Combine paprika, 1/2 teaspoon salt, and black pepper; rub evenly over pork. Coat pan with cooking spray. Add pork to pan; cook 10 minutes, turning to brown on all sides. Place pork in a 6-quart electric slow cooker.

2. Add stock and next 4 ingredients (through crushed red pepper) to skillet; bring to a boil, scraping pan to loosen browned bits. Add preserves, stirring with a whisk. Pour mixture over pork; top with onion and garlic. Cover and cook on LOW 6 1/2 hours or until pork is very tender. Remove pork from pan, reserving liquid; cool slightly. Shred with 2 forks. Remove onion with a slotted spoon; add to pork.

3. Place a large zip-top plastic bag inside a 4-cup glass measuring cup. Pour cooking liquid into bag; let stand 10 minutes (fat will rise to the top). Seal bag; carefully snip off 1 bottom corner of bag. Drain drippings into skillet, stopping before fat layer reaches opening; discard fat. Stir bourbon into drippings; bring to a boil. Cook 10 minutes or until mixture is reduced to about 1 1/2 cups. Combine 2 tablespoons cold water and cornstarch in a small bowl, stirring with a whisk; add cornstarch mixture to sauce, stirring constantly until thickened. Stir in remaining 3/4 teaspoon salt. Drizzle sauce over pork; toss gently to coat.

Cherry-Peach Sangria

 

Ingredients

1/4 cup sugar
1/4 cup brandy
2 1/2 cups pitted Rainier cherries
1 (750-milliliter) bottle albariño wine, chilled
1 cup chilled club soda
1 peach, thinly sliced
3 thyme sprigs
1 sprig purple basil (optional)
1 sprig sweet basil (optional)

Preparation

1. Combine 1/4 cup sugar and 1/4 cup brandy in a pitcher; stir until sugar dissolves. Add cherries and wine, and chill for 8 hours or up to overnight. Just before serving, stir in club soda and remaining ingredients.

Nathan’s Lemon Cake

Ingredients

CAKE:
Cooking spray
2 tablespoons all-purpose flour
2 cups all-purpose flour (about 9 ounces)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
1 cup nonfat buttermilk
2 tablespoons finely grated lemon rind
2 tablespoons fresh lemon juice
ICING:
3 cups powdered sugar
1/4 cup unsalted butter, melted
1 tablespoon lemon rind
1/4 cup fresh lemon juice
Lemon rind strips (optional)

Preparation

1. Preheat oven to 350°.

2. To prepare cake, coat 2 (8-inch) round cake pans with cooking spray; line bottoms of pans with wax paper. Coat wax paper with cooking spray. Dust pans with 2 tablespoons flour, and set aside.

3. Lightly spoon 2 cups flour into dry measuring cups, and level with a knife. Combine 2 cups flour, baking powder, baking soda, and salt, stirring with a whisk.

4. Place granulated sugar and 1/2 cup butter in a large bowl; beat with a mixer at medium speed until well blended (about 5 minutes). Add eggs, one at a time, beating well after each addition. Add flour mixture and nonfat buttermilk alternately to sugar mixture, beginning and ending with the flour mixture. Beat in 2 tablespoons lemon rind and 2 tablespoons lemon juice.

5. Pour batter into prepared pans; sharply tap pans once on counter to remove air bubbles. Bake at 350° for 32 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes on a wire rack; remove from pans. Cool completely on wire rack; remove wax paper from cake layers.

6. To prepare icing, combine powdered sugar and the remaining ingredients (except lemon rind strips) in a large bowl; stir with a whisk until smooth. Place 1 cake layer on a plate; spread half of icing on top of cake. Top with remaining cake layer. Spread remaining half of icing over top of cake. Garnish with lemon rind strips, if desired. Store cake loosely covered in the refrigerator.

A splash of soda water

The Mad Men Martini
The sex. The business. The endless amounts of cigarettes. Nothing screams Don Draper louder than whisky. But of course, Mr. Draper isn’t the only Mad Men standout, so it’s only appropriate to give this one a feminine martini touch. This HBO hit landed 17 nominations this year, so a lux scotch like Glenfiddich will do the part. We told you the ’60s are having a moment.
Recipe:
3/4 of an ounce of Scotch whisky
3/4 of an ounce of gin
2 ounces of pear juice
1/2 teaspoon of agave nectar
1/2 tablespoon of lemon juice
Mix it up, shake well, pour into a martini glass and top it off with a lime wedge.

Recipe: 1 ounce rum
1 ounce ginger ale
This one’s simple. Mix both together and then garnish with a lime wedge. Voila!
