    Mango Salsa


    • 2 semi-ripe mangos, pitted, chunked, unpeeled
    • 1 cup (16 g) fresh cilantro
    • 1/2 medium red onion, peeled or approximately 3/4 cup chopped
    • 1 jalapeño, halved, seeded
    • 1 Tablespoon lime juice or lemon juice


    1. Place all ingredients into the Vitamix container in the order listed and secure lid.
    2. Select Variable 1.
    3. Turn machine on and slowly increase speed to Variable 4.
    4. Blend for 15 seconds or until desired consistency is reached. If necessary, use the tamper to push the ingredients into the blades while processing.
    This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
  • Honey Dijon mustrad +shredded +diced green onion
  • Lemon herb hummus +arugula+diced green onion+black olives

    Lemon and Herb Hummus


    • 3cups cooked garbanzo beans
    • 1roasted shallot, see note
    • 3tablespoons tahini
    • zest and juice of one lemon
    • 1teaspoon sea salt
    • 1teaspoon fresh ground pepper
    • 1pinch red pepper flakes
    • 13cup extra virgin olive oil
    • 3tablespoons fresh parsley
    • 3tablespoons fresh dill
    • 3tablespoons basil leaves
    • Optional garnish

    • 12an English cucumber, sliced thin
    • 1tablespoon fresh parsley, finely chopped
    • 1tablespoon champagne vinegar
    • 13cup crumbled feta cheese (optional)


    1. In a food processor, combine the beans, roasted shallot, tahini, lemon zest and juice, salt, pepper and red pepper flakes and pulse to combine. With the motor running, stream in the olive oil and stop at desired smoothness (I like mine a bit textured). Tear the herbs up a bit with your fingers and add to the hummus, pulse a few times until combined. Add more if you’d like. Taste for salt and pepper; and, if you’d like, thin it out with a few tablespoons of water or more lemon juice.
    2. Note: For the roasted shallot, peel and cut it into quarters. Rub a bit of olive oil on the surface and roast at 400 F for about 20 minutes. This is quickest in a toaster oven, and can be done in advance. If you are short on time, 2 cloves of garlic make a fine alternative.
    3. The following is an optional garnish for the hummus plate. It is not completely necessary, but adds a little something different. Slice the cucumber paper thin and toss it with the chopped parsley and vinegar. Put the hummus on a serving plate, top with the cucumber mix, feta cheese and fresh herbs for garnish.

cups Gold Medal™ all-purpose flour
cup unsweetened baking cocoa
teaspoon baking soda
teaspoon baking powder
teaspoon salt
cup butter, softened
1 1/3
cups granulated sugar
1 1/2
teaspoons vanilla
cup buttermilk

cups butter, softened
cups powdered sugar
cup salted caramel sauce
tablespoons milk
teaspoon vanilla


  • 1 Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. In medium bowl, mix flour, cocoa, baking soda, baking powder and 1/4 teaspoon salt; set aside.
  • 2 In large bowl, beat 2/3 cup softened butter and the granulated sugar with electric mixer on medium speed, scraping bowl occasionally, about 1 minute or until fluffy. Beat in eggs, one at a time, until smooth. Stir in 1 1/2 teaspoons vanilla. Gradually beat flour mixture into sugar mixture alternately with buttermilk on low speed, beating after each addition, just until smooth. Scrape side of bowl occasionally.
  • 3 Spoon batter evenly into muffin cups, filling each about two-thirds full. Bake 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove cupcakes from pan to cooling rack. Cool completely, about 30 minutes.

Vanilla Buttercream Frosting


cups powdered sugar
cup butter or margarine, softened
1 1/2
teaspoons vanilla
to 2 tablespoons milk
  • 1 In medium bowl, mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in vanilla and 1 tablespoon of the milk.
  • 2 Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar. Frosts 13×9-inch cake generously, or fills and frosts an 8- or 9-inch two-layer cake.

 Mix 1Tbsp each cinnamon and sugar and sprinkle  Top with  star   picks  ( Cut  stars out of gold scrapbook paper, then  tape to toothpicks.
