Cake:

1egg
1/4cup oil
1cup milk

Glaze and Sprinkles:

1oz. multicolored modeling chocolate or fondant
2tablespoons butter, melted
3cups powdered sugar
4-6 tablespoons milk
1/2teaspoon lemon extract

Directions

  • Cakes: Preheat oven to 350ºF (or 325ºF if using dark non-stick pans). Spray two donut pans with baking spray.
  • Combine cake mix, egg, oil and water in a mixing bowl. Mix on low speed using an electric mixer for 30 seconds, then increase speed to medium and beat for 2 minutes.
  • Equally divide batter among both donut pans. Bake for 29-34 minutes, until a toothpick inserted in the center of each cake comes out clean.
  • Cool in pans for 10 minutes, then remove and set on a cooling rack. Cool cakes completely.
  • Glaze and sprinkles: Roll out modeling chocolate or fondant into thin ropes or push through a clay extruder fitted with a small round hole. Cut into 3/4-inch sprinkles.
  • Whisk together melted butter, powdered sugar, 4 tablespoons milk, and lemon juice until smooth, adding more milk as needed. Stir in pink food coloring.
  • Pour glaze over donut cake and top with sprinkles.

Ingredients

Cupcakes

1box Betty Crocker™ SuperMoist™ yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
1cup water
1box (3 oz) strawberry-flavored gelatin
2/3up champagne

Frosting and Garnish

1/2cup butter, softened
4cups powdered sugar
1/4cup champagne
1teaspoon vanilla
12strawberries, halved

Directions

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups.
  • In large bowl, make cake batter as directed on box. Divide batter evenly among muffin cups, filling each two-thirds full.
  • Bake 12 to 17 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove cupcakes from pans to cooling racks with cooking parchment paper underneath racks. Cool completely, about 15 minutes.
  • When cupcakes are fully cooled, use fork or wooden skewer to poke holes in tops of cupcakes, cleaning off end with paper towel as needed. In 2-quart saucepan, heat 1 cup water to boiling over high heat. Remove from heat; stir in gelatin and 2/3 cup champagne until gelatin dissolves. Use large spoon to spoon mixture evenly over cupcakes. Refrigerate cupcakes while making frosting.
  • In medium bowl, beat softened butter with electric mixer on medium speed until smooth. Add powdered sugar, 1/4 cup champagne and vanilla, beating until smooth.
  • Frost cupcakes. Garnish each cupcake with halved strawberry.

16oz mascarpone cheese (two 8-oz containers), softened to room temperature
3/4cup powdered sugar
1/4cup coffee liqueur
1/2teaspoon vanilla
1cup heavy whipping cream
1 1/2cups brewed espresso or strong coffee, cooled
12powdered cake donuts, cut in half horizontally
Unsweetened baking cocoa

Directions

  • In large bowl, beat mascarpone, 1/2 cup of the powdered sugar, the coffee liqueur and vanilla with electric mixer on medium speed until smooth and creamy.
  • In medium bowl, beat whipping cream and remaining 1/4 cup powdered sugar with electric mixer on medium speed until stiff peaks form. Fold into mascarpone mixture.
  • Pour espresso into shallow bowl. One at a time, dip both sides of 12 donut halves into espresso; arrange in single layer in ungreased 13×9-inch pan. Spread one-third of the mascarpone mixture over donuts. Dip remaining donut halves into espresso, and arrange on top. Spread remaining mascarpone mixture on top. Cover and refrigerate 4 hours to set.
  • Sprinkle top lightly with cocoa just before serving. Store covered in refrigerator.

2 3/4cups powdered sugar
1can (13.4 oz) dulce de leche (caramelized sweetened condensed milk)
15ready-to-use 9-inch French crepes (from two 5-oz packages)
1cup heavy whipping cream
Unsweetened baking cocoa

Directions

  • In large bowl, beat softened butter with electric mixer on medium speed until smooth. Gradually add powdered sugar, beating on low speed until combined.
  • Reserve 1/4 cup dulce de leche in small microwavable bowl. Beat remaining dulce de leche into butter mixture with electric mixer on low speed until combined.
  • Place 1 crepe on serving plate. Spread about 1/4 cup dulce de leche frosting on top. Top with another crepe. Repeat layers until all crepes and frosting are used, making sure cake is topped with unfrosted crepe.
  • In medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Spoon and spread whipped cream on top of cake. Sprinkle lightly with cocoa. Microwave reserved 1/4 cup dulce de leche uncovered on High 30 seconds, stirring halfway through, until thin enough to drizzle. Cool slightly; drizzle over cake. Serve immediately.

Topping

2oz cream cheese, softened
2to 3 teaspoons milk
1cup powdered sugar
2tablespoons heavy whipping cream
1/2cup miniature semisweet chocolate chips

Directions

  • Heat oven to 325°F. Grease and flour 12-cup bundt cake pan, or spray with baking spray with flour. In small bowl, beat 6 oz cream cheese with electric mixer on medium speed until smooth and fluffy. Beat in granulated sugar, 1 tablespoon flour and 1 egg until smooth; set aside.
  • In large bowl, beat cake mix, 1/4 cup flour, the water, oil and 2 eggs with electric mixer on medium speed 2 minutes; stir in 1/2 cup chocolate chips. Pour into pan.
  • Spoon cream cheese filling over batter, keeping it away from edge of pan. Run table knife through batter in large zigzag pattern once around pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool in pan 10 minutes. Turn pan upside down onto cooling rack; remove pan. Cool completely, about 1 hour.
  • In small bowl, beat 2 oz cream cheese and 2 teaspoons milk using whisk. Beat in powdered sugar until smooth. If too thick, add additional milk, 1 teaspoon at a time, until desired consistency. Spoon icing over cake.
  • In small microwavable bowl, microwave whipping cream uncovered on High 30 seconds or until cream just beings to simmer. Add 1/2 cup mini chocolate chips; stir until smooth. Place in small resealable food-storage plastic bag. Cut off small corner of bag; drizzle over white icing.

Cancer (June 21 – July 22) | Strawberry Daiquiri Jell-O™ Shots

Ingredients

1box (3 oz.) Jell-O™ strawberry
1cup water
1/2cup clear rum
1/4cup Grand Marnier™ (or triple sec or Cointreau™)
1/4cup freshly squeezed lime juice
50large strawberries (approximately 3-4 pounds)
Granulated sugar (for rimming)
Mini lime wedges (for garnish)

Directions

  • Combine a small package of strawberry gelatin and 1 cup of water. Heat on the stove until the gelatin has dissolved. Stir in 1/2 cup rum, 1/4 cup Grand Marnier™ (or triple sec) and 1/4 cup fresh squeezed lime juice. Set aside.
  • Shave a tiny bit from the bottoms of the strawberries. Be careful that you don’t take too much off: just enough to allow them to stand upright. Then, hollow out the strawberries, using a strawberry huller, paring knife or grapefruit spoon.
  • Set strawberries snugly into a pan and fill them with spiked gelatin. Refrigerate and allow to set 3-4 hours.
  • Just before you’re ready to serve, rotate the rim of the strawberry in sugar. Garnish with mini lime wedges, if desired, and serve!

Leo (July 23 – August 22) | Boozy Freakshakes

To make: Start with a pint of chocolate chip cookie dough ice cream and blend with 1/3 cup milk and 1/3 cup chocolate liqueur. If you like your milkshake on the thinner side, we suggest adding a more milk.

Toppings: We topped our shake with an ice cream sandwich, some cookies, and loads of chocolate chips, but literally anything sweet and chocolaty would be incredible.

BIRTHDAY CAKE FREAKSHAKE

To make: We mixed 1 pint of birthday cake ice cream with 1/3 cup of milk and 1/3 cup of cake vodka to create a killer base for our birthday-inspired treat.

Toppings: We stacked a piece of cake, a mini cupcake, lots of whipped cream, rainbow sprinkles and duh, a cherry on top. Because, obviously, you need a cherry on top.

We encourage you to stack as high as you can. The sky is literally the limit when it comes to freakshakes, y’all.

MUDSLIDE BROWNIE FREAKSHAKE

To make: Chocolate fudge brownie ice cream blended with 1/3 cup of milk and 1/3 cup of Kahlua liqueur make a killer base for this freakshake.

Toppings: We topped it with three (yes THREE!) different brownies, caramel, hot fudge and a dollop of whipped cream for good measure.

Honestly, it could have used some chopped-up candy bars, but we challenge you to fulfill this egregious missed opportunity.

Virgo (August 23 – September 22) | Boozy Orange Slush

Ingredients

1package (3 oz) Jell-O™ orange-flavored
1package (3 oz) Jell-O™ cherry-flavored
2cups sugar
5cups boiling water
6cups orange juice
3cups vodka (or preferred alcohol)
2liters ginger ale or preferred soda (for mixing)

Directions

  • In a large punch bowl, combine Jell-O™ with sugar and boiling water, whisking to dissolve. Once dissolved, stir in orange juice and vodka.
  • Transfer to a large freezer safe container and freeze overnight (or until frozen).
  • Once frozen, break up slush with a spoon.
  • To serve, fill a glass with 3/4 slush and 1/4 ginger ale (or other soda), stir with straw and enjoy.

FOR THE WAFFLES —

2cups Bisquick™ Original baking mix
1 1/3cups milk
1/2cup granulated sugar
1/4cup unsweetened cocoa powder
2tablespoons vegetable oil
1egg
1bag (12 oz) frozen sweet cherries, thawed OR fresh cherries
Fresh mint leaves, for garnish

FOR THE WHIPPED CREAM —

1cup heavy cream
2tablespoons granulated sugar

FOR THE GANACHE —

1/2cup heavy cream
6ounces semi-sweet chocolate chips

Directions

  • Heat waffle iron. In a large bowl, whisk together Bisquick, milk, sugar, cocoa powder, vegetable oil and egg just until smooth.
  • Lightly spray top and bottom grids of waffle iron with cooking spray. Carefully ladle 1/2 cup batter into the center of the iron; close and cook until done according to waffle iron or when the iron is no longer steaming. Carefully remove waffle from iron and set aside. Repeat with remaining batter. Let waffles cool completely.
  • In a large bowl or bowl of a stand mixer, whisk together heavy cream and sugar on high until stiff peaks form, about 5 minutes.
  • Stack two waffles on a serving plate. Top with half of the whipped cream, then a layer of cherries. Top with two more waffles. Top with remaining whipped cream and another layer of cherries. Top with remaining waffles.
  • In a small saucepan over medium heat, bring heavy cream to a boil. Pour over chocolate chips in a bowl and whisk vigorously until a smooth ganache forms. Cool slightly, then spoon over the top of the waffle cake. Top with remaining cherries and garnish with mint leaves.

Directions

  • Unwrap ice cream sandwiches and arrange 6 on bottom of a large jelly roll plate.
  • Spread about 3/4 of hot fudge on top, then arrange remaining ice cream sandwiches in a second layer atop the hot fudge.
  • Cover the entire cake with whipped topping. Place in freezer until firm, about 3 hours.
  • Just before serving, melt the remaining hot fudge and drizzle over the cake. Decorate with sprinkles, if desired.

  • Heat oven to 350°F.
  • In a large bowl or stand mixer, beat together brownie mix, egg, butter and vodka (if desired). Spread onto a large parchment lined baking sheet, approximately 1/2-inch thick.
  • Bake for 5 minutes, then sprinkle with candy.
  • Return to the oven and bake 30-35 minutes more, or until the center is firm and no longer very soft to the touch.
  • Remove and cool completely.
  • Break into pieces before serving.

Capricorn (December 22 – January 19) | Naked Peach Cobbler Cake

 Ingredients:
1 box yellow cake mix, divided use
1 cup all-purpose flour
1 packet active dry yeast
2/3 cup warm water
2 eggs
2 (21 0z.) cans peach pie filling
1/2 cup (1 stick) butter
1 cup powdered sugar
3-4 tbsp. milk
Directions:
Preheat oven to 350F degrees. Spray 9×13 baking dish with nonstick cooking spray
The first thing you need to do is measure out 2 cups of the cake mix.
Put aside the leftover cake mix. We’ll use that later for the crumble topping.
In a mixing bowl combine the 2 cups of cake mix, along with the flour and yeast. Stir until combined.Then pour in warm water and stir well. Next add eggs and stirBatter will be pretty lumpy. It will be blob-like..Spread the mixture into your prepared baking dish. This will take you a minute to do as it is kinda stretchy because of the yeast.Then spread both cans of pie filling on top of cake batter. Try to spread it out as evenly as possible.In a bowl, combine the rest of the cake mix (that you set aside earlier) with the butter. I cubed the butter to help blend it in easier.You can use a pastry cutter to combine it together or a fork or even your hands. It should be clumpy. Sprinkle this topping mixture over the pie fillingNow, this next step really isn’t totally necessary. But let’s face it, icing makes everything just a bit better. In a bowl, combine powdered sugar and milk. Start with a smaller amount of milk and then add more until it gets to the desired consistency.. Drizzle icing all over the top of cake.And then serve. You can slice it up and serve on a plate, although those peaches can be slippery suckers and can slide a bit off the cake some. Or you can serve it up warm in bowls with a generous scoop of vanilla ice cream.
