The humble hamburger is a staple of western culture. Burger joints, takeaway food outlets and all-night-eateries serve them up in their millions – with cheese, salad, gherkins and pickles, bacon and sauces. Why not celebrate Hamburger Day by making your own hamburgers?

Spicy BBQ Bacon Ranch Burger

  • Yields: 4 Servings

 

Ingredients

  • 1 pound ground beef (preferably 80/20 meat-to-fat ratio)
  • 1 packet (1 oz) Hidden Valley® Spicy Ranch Salad Dressing & Seasoning Mix
  • 4 slices cheddar cheese
  • 1 tomato sliced
  • lettuce
  • 8 slices bacon precooked
  • 4 hamburger buns lightly toasted
  • 1 cup Kingsford® Honey Jalapeño Mesquite BBQ Sauce for basting the burgers and brushing on buns

 

Instructions

Using Kingsford® charcoal, build a fire for direct grilling and preheat to medium-high (approximately 400°F). While the grill preheats, gently blend ground beef and spicy ranch seasoning mix in a large mixing bowl.

Form seasoned beef into four ¼ pound burger patties.

Grill the burgers for approximately 4 minutes per side until they reach an internal temperature of 160°F. During the last minute of cooking, baste both sides of the burgers with Kingsford® Honey Jalapeño Mesquite BBQ Sauce* and top each burger with a slice of cheese.

To assemble the burgers, place lettuce and tomato slices on each bottom bun, top with a burger patty, and bacon.

Brush additional BBQ sauce on the cut side of the top bun then place on the burger.

*Tip: Always add sauce at the end of the cooking process as too much exposure to direct heat can cause it to burn. Basting with a few minutes left in the grilling process ensures that the sauce has time to caramelize without overcooking

Barbecued Burgers Recipe

TOTAL TIME: Prep: 25 min. Grill: 15 min. YIELD:6 servings

Ingredients

  • SAUCE:
  • 1 cup ketchup
  • 1/2 cup packed brown sugar
  • 1/3 cup sugar
  • 1/4 cup honey
  • 1/4 cup molasses
  • 2 teaspoons prepared mustard
  • 1-1/2 teaspoons Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon liquid smoke
  • 1/8 teaspoon pepper
  • BURGERS:
  • 1 large egg, lightly beaten
  • 1/3 cup quick-cooking oats
  • 1/4 teaspoon onion salt
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 1-1/2 pounds ground beef
  • 6 hamburger buns, split
  • Toppings of your choice

Directions

  • 1. In a small saucepan, combine the first 10 ingredients. Bring to a boil. Remove from the heat. Set aside 1 cup barbecue sauce to serve with burgers.
  • 2. In a large bowl, combine the egg, oats, 1/4 cup of the remaining barbecue sauce, onion salt, garlic salt, pepper and salt. Crumble beef over mixture and mix well. Shape into six patties.
  • 3. Grill, covered, over medium heat for 6-8 minutes on each side or until a thermometer reads 160°, basting with 1/2 cup barbecue sauce during the last 5 minutes. Serve on buns with toppings of your choice and reserved barbecue sauce. Yield: 6 servings.
Grilled Italian Meatball Burgers Recipe
TOTAL TIME: Prep: 25 min. Grill: 15 min. YIELD:8 servings

Ingredients

  • 1 large egg, lightly beaten
  • 1/3 cup seasoned bread crumbs
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1-1/2 pounds lean ground beef (90% lean)
  • 1/2 pound Italian turkey sausage links, casings removed
  • 3/4 cup shredded part-skim mozzarella cheese
  • 8 kaiser rolls, split
  • 1 cup roasted garlic Parmesan spaghetti sauce, warmed
Directions
  • 1. In a large bowl, combine the first seven ingredients. Crumble beef and sausage over mixture and mix well. Shape into eight burgers.
  • 2. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a meat thermometer reads 165° and juices run clear.
  • 3. Sprinkle burgers with cheese; cook 2-3 minutes longer or until cheese is melted. Remove and keep warm.
  • 4. Grill or broil rolls for 1-2 minutes or until toasted. Serve burgers on rolls with spaghetti sauce. Yield: 8 servings.
Dressed-Up Bacon Burgers Recipe

Ingredients

  • 3/4 cup mayonnaise
  • 3 tablespoons sweet pickle relish
  • 3 tablespoons ketchup
  • 1 tablespoon sugar
  • 1 tablespoon dried minced onion
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 2 pounds ground beef
  • 8 Jones Dairy Farm Dry-Aged Bacon strips
  • 8 slices cheddar cheese
  • 8 hamburger buns, split and toasted
  • Lettuce leaves

Directions

  • 1. In a small bowl, whisk the mayonnaise, pickle relish, ketchup, sugar and onion until well blended. Cover and refrigerate. In a large bowl, combine the Worcestershire sauce, salt, garlic powder and pepper. Crumble beef over mixture; mix well. Shape into eight patties.

  • 2. Place bacon on a piece of heavy-duty foil on one side of the grill. Place the patties on the other side of the grill. Grill, covered, over medium-hot heat for 5-7 minutes on each side or until a thermometer inserted in burger reads 160° and juices run clear. Cook bacon until crisp; drain on paper towels.

  • 3. Place a cheese slice on each burger; cover and grill until cheese is melted. Layer bottom half of each bun with the lettuce, burger, bacon and mayonnaise mixture. Replace bun tops. Yield: 8 servings.

Mushroom Burgers Recipe
TOTAL TIME: Prep/Total Time: 25 min. YIELD:4 servings

Ingredients

  • 2 cups finely chopped fresh mushrooms
  • 2 large eggs, lightly beaten
  • 1/2 cup dry bread crumbs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup finely chopped onion
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 1 tablespoon canola oil
  • 4 whole wheat hamburger buns, split
  • 4 lettuce leaves

Directions

  • 1. In a large bowl, combine the first nine ingredients. Shape into four 3/4-in.-thick patties.

  • 1-1/2 pounds ground beef
  • 3 tablespoons finely chopped onion
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/3 cup canned sliced mushrooms
  • 6 Jones Dairy Farm Dry-Aged Bacon strips, cooked and crumbled
  • 1/4 cup mayonnaise
  • 6 hamburger buns, split
  • Lettuce leaves and tomato slices, optional

Directions

  • 1. In a large bowl, combine the beef, onion, garlic salt and pepper. Shape into six patties, 3/4 in. thick.
  • 2. In a small bowl, combine the cheese, mushrooms, bacon and mayonnaise; chill.

Classic French Fries

  • Prep Time: 10 mins
  • Total Time: 55 mins
  • Servings: 4

Ingredients

    • 4 -5 large russet potatoes
    • peanut oil
    • salt
Directions
  1. Preheat oven to 200 degrees.
  2. In a large dutch oven heat oil to 320 degrees.
  3. Peel potatoes and EVENLY cut fries into 1/4″ x 1/4″ strips of equal length.
  4. Place in a large bowl of cold water as you’re slicing.
  5. Drain potatoes thoroughly, removing any excess water.
  6. When oil reaches 320 degrees, submerge the potatoes in the oil.
  7. Working in small batches, fry for 2 to 3 minutes until they are pale and floppy.
  8. Remove from oil, drain, and cool to room temperature.
  9. Increase the temperature of the oil to 375 degrees.
  10. Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes.
  11. Remove and drain on roasting rack.
  12. Season with kosher salt.
  13. Once again this is done is small batches and will need to be kept warm in the oven until all potatoes are fried.

Perfect French Fries

 Ingredients

  •  5 pounds russet potatoes
  •  Vegetable or peanut oil, for frying
  •  Sea salt

Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.

Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)

When you’re ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.

Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.

Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil’s hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
