  • 1 (4.5-ounce) can Old El Paso™ chopped green chiles, drained
  • 8 (8-inch) Old El Paso™ flour tortillas for burritos
  • 1 (16-ounce) can Old El Paso™ refried beans, heated
  • 2 avocados, peeled, halved, seeded and sliced
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh cilantro leaves

DIRECTIONS:

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Heat olive oil in a medium skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks. Drain excess fat and stir in taco seasoning and green chiles; set aside.
  3. Top tortilla with refried beans, ground beef mixture, avocado and mozzarella, and then top with another tortilla. Repeat with remaining tortillas to make 4 quesadillas.
  4. Place quesadillas onto the prepared baking sheet. Place into oven and bake until the cheese has melted, about 8-10 minutes.

Chili Cheese Dogs

Ingredients  

  • 8 small russet potatoes cut into wedges
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1/4 teaspoon dried rosemary
  • 1/2 cup grated parmesan cheese
  • Salt and black pepper to taste
  • 2 tablespoons chopped parsley for garnish
  • Ketchup or other sauces for serving, optional

Instructions 

  • Preheat oven to 425 degrees F. Line two large baking sheets with parchment paper and set aside.
  • Place the potato wedges in a large bowl of ice water. Soak for 30 minutes.
  • While the potatoes are soaking, combine the olive oil, garlic, and dried rosemary in a small bowl.
  • Drain the potatoes and pat them dry with a paper towel. Place the potato wedges back in the bowl. Drizzle the olive oil and garlic mixture over the potatoes and gently toss until wedges are well coated.
  • Place potato wedges on the prepared baking sheets, in an even layer. Sprinkle ¼ cup of the Parmesan cheese over potato wedges and season with salt and pepper, to taste.
  • Bake for 35 minutes, flipping halfway, or until the potatoes are crisp and golden brown. Remove from oven and sprinkle the remaining Parmesan cheese over the wedges. Garnish with chopped parsley.
  • Serve warm with ketchup or other sauces, if desired.

Directions

  1. For the chili: Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring frequently, until soft and translucent, about 8 minutes. Add the beef and garlic and cook, stirring and breaking up into smaller pieces with a wooden spoon, until the meat is brown and cooked through, about 5 minutes. Add the chili powder, cayenne, cumin, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until well combined, about 1 minute. 
  2. Add the tomatoes, tomato paste and 1/2 cup water to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered and stirring occasionally, until slightly thickened, about 10 minutes. Season with salt and pepper and keep warm.
  3. For the chili dogs: Preheat a grill or large grill pan to medium. Grill the hot dogs according to the package directions until grill marks appear and the hot dogs are warmed through, about 5 minutes. Working in batches, if necessary, grill the cut side of the buns until golden and toasted, about 1 minute. Build the hot dogs and top each with about 1/4 cup of chili spooned down the length of the hot dog. Sprinkle each with some cheese and serve with ketchup and mustard.

  1. Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F. 
  2. Add half the chicken wing parts to the oil and fry them until they’re golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes. 
  3. Serve with blue cheese dip, celery sticks… and your favorite cold, fizzy beverage

For the Au Jus

  • 1 Tablespoon Parsley freshly chopped
  • 1 Clove Garlic minced
  • 1 Cup Beef Broth low sodium
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Parsley freshly chopped

Instructions

  • Preheat oven to 350° and grease a 9″-x-13″ baking sheet with cooking spray. Place the bottom half of the rolls in the bottom of the pan.

To Caramelize Onions

  • In a large skillet over medium heat, melt 2 tablespoons of butter. Add onion and 2 sprigs thyme, water (this helps them brown) and season with salt and pepper.
  • Cook, stirring occasionally, until the onions begin to soften and turn slightly golden. Continue cooking, stirring occasionally, until onions are caramelized, 20 to 25 minutes. Remove from heat.

For The Sandwiches

  • Spread an even layer of mustard onto bread. Top with a layer of roast beef and a layer of provolone. Top with caramelized onions, then cover with the tops of the rolls.
  • Melt all but one tablespoon of the remaining butter and mix with 1 teaspoon worcestershire, mayonnaise, dijon mustard, and the toasted sesame seeds. Spread over the buns. Cover with foil. Bake until golden and cooked through, about 20-30 minutes. 

To make the Au Jus

  • Meanwhile,  Melt remaining 1 tablespoon butter in a medium skillet over medium heat. Stir in garlic and cook until fragrant. Add beef stock, Worcestershire sauce and remaining 2 sprigs thyme, stripped from stem. Season with salt and pepper. Simmer for 10 minutes until reduced slightly. Serve squares with au jus on the side for dipping. 

Nachos Supreme

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 cup chopped red or green bell pepper
  • 1 package McCormick® Fajita Seasoning Mix
  • 1/4 cup water

INSTRUCTIONS

  1. Preheat oven to 350°. In a large bowl, mix together 2 cups mozzarella, cream cheese, ricotta, ⅓ cup Parmesan, Italian seasoning, and red pepper flakes. Season with salt.   1. Lightly coat a 9×13 inch dish with cooking spray.
  2. Cut the slider buns in half like a sandwich.
  3. Place the bottom layer into the prepared dish.
  4. Add half of the cheese.
  5. Follow with a layer of ham, then the remaining cheese.
  6. In a small microwave-safe bowl, melt the butter.
  7. Whisk in brown sugar, Dijon, poppy seeds, onion powder, garlic powder, Worcestershire, salt & pepper.
  8. Brush this mixture over the tops of the rolls.
  9. Pour any remaining mixture to coat thoroughly.

Instructions
  • Place cheese and cornflour in a bowl, toss to coat.
  • Melt butter over medium heat in a large saucepan or small pot.
  • Add garlic and onion, cook slowly for 3 minutes or until onion is translucent but not browned.
  • Add tomato (including juices) and cook for 2 minutes until tomato is slightly softened.
  • Add evaporated milk and cheese. Stir, then add chiles and Spices.
  • Stir until cheese melts and it becomes a silky sauce.
  • Add salt to taste – amount required depends on saltiness of cheese used – and stir through coriander.
  • Stir in milk or water to adjust consistency (I use 2 tbsp) – the dip thickens when it cools, and milk can be added later to adjust to taste.
  • Remove from heat. Serve warm or at room temperature – it will be soft and scoopable even when it cools.
  • Store in the refrigerator. When refrigerated, it becomes the consistency of the cheese spread sold in jars that are not in the refrigerator section. Reheat in microwave and adjust consistency as desired with a tiny bit of milk. If you add too much, just put on stove again until it thickens.

Ingredients
  • 8 tablespoons vegetable oil divided (or as needed)
  • 2 sweet yellow onion halved and thinly sliced (2-inch slices)

  • 5 to 6 pounds petite sirloin thinly sliced sirloin
  • 2 teaspoon Lawry’s Seasoned Salt or other all-purpose seasoning, divided

  • 16 hoagie rolls
  • 12 tablespoons softened butter
  • 14 ounces sliced Provolone cheese (7 1-ounce slices) I used Tillamook Farmstyle Thick Cut
Instructions
  • Before starting, place beef in the freezer for about 20 to 30 minutes. This will make it easy to slice thinly.
  • Add 2 tablespoons vegetable oil to a large, deep (14-inch) sauté pan  and place over MEDIUM-LOW heat. Add onion and bell peppers. Allow to cook, stirring occasionally, until very tender. If they are beginning to brown, turn the heat under the skillet down a bit. While the veggies are cooking, prepare the steak, returning to stir every now and then.
  • Remove steak from freezer and place it on a cutting board. Use a sharp knife to trim edges of excess fat and then slice it as thinly as possible across the grain. Chop the sliced steak into very small pieces. Keep chopping until you can chop no more! You want little ¼-inch-ish pieces. Check on those veggies periodically while you’re prepping the beef.
  • When the veggies are tender, transfer them to a dish and return the skillet to the heat. Add additional oil and place over MEDIUM-HIGH heat. Add half of the chopped steak and cook, stirring frequently, for about 4 to 5 minutes, or until no pink remains. Season with ½ teaspoon each seasoned salt and garlic pepper while cooking. Transfer first batch of steak with a slotted spoon to dish with onions and peppers, leaving juice behind in pan. Add additional oil, if needed and repeat with remaining steak and seasoning.
  • Preheat oven to 400 degrees F.
  • Split open the hoagies rolls but do not separate them. Spread them with the softened butter and place them on a baking sheet. Transfer the baking sheet to the oven and bake for 3 to 5 minutes or until lightly golden and toasted.
  • Drain off all of the juices from the pan and return to the stove. Add back all of the steak and the onions and peppers. Place 7 provolone slices over the mixture in a circle and cover the pan. Cook on MEDIUM until cheese melts, about 4 to 5 minutes, then stir and use tongs to transfer to the toasted sandwich rolls.

  1. Whisk together the buttermilk, hot sauce and 1 1/2 teaspoons salt in a large mixing bowl. Add the chicken and turn to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours and up to overnight.
  2. Meanwhile, make the maple butter. Combine the syrup and salted butter in a small mixing bowl. Stir until smooth and creamy. Cover with plastic wrap and keep at room temperature until ready to use.
  3. Preheat the oven to 250 degrees F.
  4. Preheat a 6 1/2-inch round waffle iron to medium-high heat and spray with nonstick spray. Make the waffle batter according to the package directions, and then cook the waffles to desired doneness. Transfer to the oven to keep warm while frying the chicken.

  6. Remove the chicken from the buttermilk and transfer to the bag of seasoned flour, letting any excess marinade stay behind in the bowl. Seal the bag and shake until all of the chicken is evenly coated. Transfer the chicken back into the bowl of marinade, tossing gently to coat. Return the chicken to the seasoned flour, seal the bag and shake again to evenly coat. Transfer the chicken to a rack set over a baking sheet in a single layer and let sit for 15 minutes.
  7. Fry the chicken in batches until golden brown and cooked through, 6 to 8 minutes per batch. Make sure that the oil comes back to temperature after each batch. Transfer the chicken to a large paper-towel-lined plate using a slotted spoon or tongs to absorb any excess oil. Season liberally with salt.
  8. To assemble, cut each waffle into quarters. Sandwich 1 piece of fried chicken between 2 waffle pieces slathered with the maple butter. Continue to assemble sandwiches with the remaining chicken, waffles and maple butter. Serve immediately with your favorite hot sauce on the side.

  • 1 (6 ounce) package thinly sliced deli ham
  • ¾ pound shredded Swiss cheese

  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons dried minced onion
  • ¼ teaspoon salt, or to taste

Directions
  • Step 1 Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch square baking pan with aluminum foil and spray with cooking spray.
  • Step 2 Slice attached rolls in half width-wise with a serrated knife, keeping rolls connected, into a bottom and top ‘slab.’ Place bottom slab in the prepared pan.
  • Step 3 Layer about half the ham evenly over the bottom slab of rolls. Layer Swiss cheese evenly on top, and arrange remaining ham over the cheese. Cover with the top slab.
  • Step 4 Place butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minute. Add mustard, poppy seeds, Worcestershire sauce, onion, salt, and pepper. Whisk to combine.
  • Step 5 Pour butter mixture evenly and slowly over the rolls. Spread over the tops using a spatula; some of the mixture will pool at the base of the rolls. Cover with aluminum foil and let stand at room temperature for 5 to 10 minutes.
  • Step 6 Bake in the preheated oven until cheese has melted, about 20 minutes. Uncover and continue baking until browned as desired, 3 to 5 minutes more. Slice into individual sliders.

Slow Cooker Georgia Pulled Pork Barbeque

BBQ Sauce:

1 cup finely chopped onion

2 cups cider vinegar 

6 ounces tomato juice

1 teaspoon garlic powder

Roast:

2 medium sweet onions, such as Vidalia, quartered 

2 teaspoons light brown sugar 

1 teaspoon smoked paprika 

2 teaspoons salt 

Pinch black pepper 

One 4- to 6-pound Boston butt pork roast, bone-in 

Buns, for serving

Directions

  1. For the sauce: Puree the onion in a blender with 1/4 cup water. Place the pureed onion in a 2-quart saucepan with additional water to cover. Bring to a boil, then reduce the heat. Cook, stirring constantly until the water has almost evaporated. Add the vinegar, tomato juice, pepper, garlic powder, cayenne and hot sauce and mix well. Bring to a boil, and then stir in the sugar. Immediately remove from the heat. Set 1 cup aside for the roast. Let the remaining sauce cool completely, then refrigerate for later use.
  2. For the roast: Put the quartered onions in the bottom of a 5- to 6-quart slow cooker. Mix the brown sugar, paprika, salt and pepper and rub it over the pork roast. Then place in the slow cooker on top of the onions. Drizzle the reserved 1 cup of sauce over the roast. Cook the roast in the slow cooker on low for 10 to 12 hours, checking after 10 hours for tenderness.
  3. Remove the meat and onions from the slow cooker. Discard the onions and finely shred the pork. Reserve the juices from the slow cooker to add to the meat for desired juiciness.
  4. Serve on a bun with the juice.

Classic Bloody Mary

Ingredients
  • Yield: 4 drinks 1x
  • 2 cups tomato juice, chilled
  • ¼ cup fresh lemon juice
  • 2 teaspoons Worcestershire sauce (vegan as desired)
  • 2 teaspoons prepared horseradish
  • ½ teaspoon Tabasco hot sauce
  • ½ teaspoon celery salt
  • ⅛ teaspoon black pepper
  • 1 cup (8 ounces) vodka, chilled
  • Ice, for serving (try clear ice!)
  • For the rim: Old Bay seasoning (purchased or homemade) and kosher salt
  • For the garnish: celery stalk, lemon wedge, olive, cocktail onion (use cocktail picks if desired)
Instructions
  1. If time allows, chill the tomato juice and vodka. Shake the tomato juice before pouring.
  2. In a large cocktail shaker, combine the tomato juice, lemon juice, Worcestershire sauce, horseradish, Tabasco, celery salt and black pepper. Shake well to combine (without ice). Strain into a quart mason jar or small pitcher.
  3. Optional: If time, chill at least 1 hour or overnight for the best flavor. (Or, make ahead and store up to 1 week.) But you also can serve right away!
  4. To serve, on a plate place a mixture of roughly half kosher salt and half Old Bay seasoning (or celery salt). Cut a notch in a lemon wedge, then run it around the rim of a glass. Dip the edge of the rim into a plate of salt.
  5. To each glass, add 2 ounces (¼ cup) of vodka and ½ cup of Bloody Mary mix and stir gently to combine. Fill the glass with ice and add the garnishes.
